Recipe: Sweet Potato Vegan Pizza

I've experimenting with different ways to capture plant-based flavours in (the world's favourite meal) pizza. I got the idea for using sweet potato from this Lady and Pups recipe. This is my spin:

I started with the pizza sauce, making sure I got it just the way I wanted it.

SAUCE INGREDIENTS

  • Campari tomoatoes
  • Thyme
  • Rosemary
  • Oregano Powder
  • Garlic
  • Cumin
  • Paprika
  • Pink Himalayan Sea Salt
  • Cayenne Pepper
  • Black Pepper
  • Cardamom Powder

Chop the tomatoes. Add all ingredients to the a large pot. Turn the heat on medium. Stir every 5 minutes for 15 minutes. Turn the stove off letting the mixture cool. Blend. Add water as needed. Return sauce to the pot on low heat for 20 minutes. Let sit


THE DOUGH

The dough is made from Kamut flakes which I mill into flour using a Nutribullet. 

OTHER INGREDIENTS

Add the oil, salt, pepper and syrup. Mix until flour is clumpy. Slowly add warm water until dough can be kneaded. Roll your dough into a lightly greased pan.

  • A pinch of Cayenne Pepper
  • Pink Himalayan Sea Salt to taste
  • 1 TBSP Olive oil or Coconut Oil
  • 1 tsp Raw Pure Maple Syrup

THE TOPPINGS

Sweet potatoes or sweet yams are the star of this show. I used 3/4 of a large one for this dish.

OTHER INGREDIENTS

Peel then thinly slice or scallop the sweet potato. Finely chop your onion, peppers, and basil. Add a tiny splash of olive oil or coconut oil to a saucepan. Sauté the seasonings first, then add the sweet potatoes. Add a tsp  of water, not more oil, if you need to leave ingredients to sauté longer. You're not trying to fully cook the potatoes, that will happen in the oven.

  • Sweet/bell Peppers
  • White Onions 
  • Basil
  • Scotch Bonnet Pepper
  • Cashew parmesan

THE ASSEMBLY

Ladle your sauce onto your dough. Add your sautéed toppings. Put in the oven uncovered until your sweet potatoes are cooked.
